This is a bigger gap between the two than when I was applying 4 years ago.

25K is a good size. No reason to get bigger. Im surprised Bama has gotten to be 36K. When I was at Auburn, AU was about 19K. Alabama was only about 12K. (early 80's).

The current endowment numbers show UA brought in $10.7 million, comparatively AU brought in $1.2 million.

UK's final 2014 enrollment number was 30,062. The university began an ambitious building/renovation project after the Commonwealth took away the 16-campus feeder community college system.
UK and Louisville are now the two flagship state schools and are limited to one campus each. The regional universities such as EKU can have multiple campuses.
UK's planned growth and expansion will continue until a "build-out" enrollment of about 37,000 is reached.

62185 is not on one campus. It's the total number on all campuses in the A&M system. But the last count I saw was roughly 52K for just the College Station campus. 2nd or 3rd biggest individual campus in the US. I think ASU is still the largest.
I believe 62K is College Station, Galveston, Qatar, & maybe Fort Worth (Law) too. Galveston & Qatar considered branch campuses. This number does not include the entire system which is A&M-CC, A&M-SA, A&M-Kingsville, A&M-International, A&M-Commerence, West A&M, & Tarleton State which are all apart of the A&M system. I'm sure I am forgetting some though.
Edit: 55,810 is just College Station.

A&M is not just cramming students in. They are building facilities and hiring teachers to handle the growth. There were 17 construction projects going on at A&M last year to handle the growth.
In time, that equates to a ton more alumni donating back to the school and supporting athletics - hence the need for 102,000 seats at Kyle Field.

I think Bama's ACT numbers have been rising during the push to add more students, it appears they are growing without lessening the quality of student admitted. I think UA's acceptance rate is under 60%
