A brisket that has the right amount of fat and is smoked properly is the bomb!
This is correct. It has to be well marbled IMO to be really good. You get the nice fat chunk in there and it's amazing. If it's like roast beef, they didn't do it right.

If you ever eat at Louis Mueller's in Taylor Texas you will change your mind. I guarantee it.
There are very few people who know how to 1) Select the right meat, 2) Trim it properly, 3) Season it properly, and most importantly 4) Smoke it properly over an 8-12 hour period.
When you do all of these things right consistently, you get written up in magazines.

Used to think this till I had well made brisket.

Not if it’s smoked correctly. I have had smoked brisket from “award winning” brisket restaurants that tasted like dry cardboard. Not many people excel at it. But if it’s done correctly, which most can’t do, then its underrated.

Gristle tacos? Nah, I'm good.
This is the closest pic I could find of the tacos sold at a stand that sells them on Saturday at a flee market 2 towns over. The meat has a texture like brisket, but taste way better, probably fattier or something.

The payoff is not worth the time and money. I think the best thing you can do with a brisket is turn it into pastrami and put it on rye bread

Beef should be roasted or braised, not BBQ’d. Facts. I don’t like roast beef with bbq sauce.

If the cook doesn't have a proper pit and know wtf they're doing, brisket is a waste of time. Done right and there is nothing better..except possibly beef ribs also done right. I like pulled pork as much as anyone, but you gotta admit it's pretty pedestrian next to an expertly done brisket or beef rib.

I take you or anyone you know, knows nothing about cooking it

I like bbq brisket but I also support this statement.

If you have had brisket at any of the places in Lockhart TX, especially at Kreuz or Terry Blacks, and you truly feel this way, the problem is you. And I like beef ribs just as much or better, but that takes nothing away from how good brisket can be.

Couple of thoughts:
Most southerners prefer pulled pork, mostly because everyone outside of the state of Texas seems to struggle to make decent brisket in a commercial setting.
Sauced meat is a huge red flag. You're hiding something. Serve that shite on the side, if at all. Good meat needs no sauce (stop it carolinians).
Gout: get thee an allopurinol Rx and say goodbye to gout forever. Seriously a lifesaver for me. No diet alterations, no beer/booze limits and no gout attacks since I started on the good drugs.
