Good brisket isn’t hard to make, but it takes patience and practice. Thing about brisket is it intimidates a lot of backyard BBQers. Some go by time, others temp, bend, feel ect. Its a little of all those. The same for pork ribs, butt, bird and all the others. Brisket just takes longer. My biggest advice is don’t get too drunk when prepping the brisket and getting it started.

White sauce is only good on chicken or turkey, nothing else. It’s an abomination to put it on anything else.

If you smoke chicken and turkey breast right, you don’t need any nasty arse white sauce.

I use sauces … white or otherwise … lightly, just as an enhancer. I don’t like smoked meats of any type drenched and slathered in ANY kind of sauce.
