To all the Texans, this is the SEC Rant, the appropriate BBQ accompaniment to football is pork based. Chicken, turkey, beef are all nice “and alsos”.

So let’s not even pretend that Austin is the best BBQ city in the world.

I don’t even consider brisket to be barbecue.

I don't care what anyone else's BBQ is. I'm fully self-assured over here eating my brisket and drinking my sweet tea.

Love brisket, but barbecue is pork. Just like Texas is a nice place, but it’s not the Southeast. Texas is it’s own thing, not the South, and brisket is it’s own thing, not barbecue.

I would chose Kansas City first and then Texas for BBQ. Don't care what you call it. Those would taste the best. Most BBQ in South Carolina kind of sucks. Mushy wet mess. And ketchup base > mustard base but dry rub w/ vinegar sauce on the side is actually the best for pork Q.

You might be right, but brisket is the best.

Agreed. I love beef, but BBQ it ain't. Also, I've probably never had good brisket, but I don't see it ever topping pulled pork. Pork fat dissolves in the meat. Brisket fat is just big disgusting globs. I'll take a good steak over BBQ all day, but keep your damn brisket away from BBQ.

I prefer beef (brisket and short ribs are my favorites). I smoked some pork spare ribs (prefer baby back) Sunday but it came a dangerous thunder/lightning storm about 5 hours into it and messed up the finish. They were OK but just didn't go long enough. On a side note, seems to me pork has gone down hill over the last year or so. I know China owns many of the larger pork producers but it just seems most pork I buy is fattier than it once was. Bacon is almost scraps.

There’s a lot of effeminate men in this thread. Anyone that thinks pork bbq is better than beef bbq is delusional. I love pork but beef has far more flavor. This is not debatable so don’t even try. We will all know you’re a soy boy.

Any of you tried pork steak? I think it’s mainly a St. Louis area thing. Steaks sliced from a pork butt. I prefer pulled pork, but it’s good if done right.

The point of BBQ is to turn cheap cuts of meat into a delicacy. In most of the South, historically, that cheap meat was pork, but in Texas, where cattle roamed free for the taking, beef was cheap and plentiful. That's the reason for the distinction.
