I think the take isn't so much "it's immoral to fire a high-profile employee without having an HR representative in the room" as it is "it's stupid to fire a high-profile employee without having an HR representative in the room."

If you as a company or organization are about to make a decision with millions of dollars at stake and are going to enact a provision in a contract that could lead to litigation, you want to do everything by the book, which in this case is having multiple people, including HR, in the room.
