Obviously the BCSNCG vs Oregon (which I attended) as already mentioned.
After that, I would have to say the 1987 20-10 win over UNC in Chapel Hill. My now ex-wife and I were living in Hilton Head at the time. We left for the game on Friday. As we were leaving, my wife asked one of my co-workers (who happened to be my bookie...which I thought was on the down low since she didn't like me betting) what the line was on the UNC game. Everyone looked at her in shock...then looked at my bewilderment. She gave me this "Did you really think I was that clueless" look. Everyone around us started laughing. My buddy/bookie said the line was Auburn -7.5. She said "Give us Auburn for $100" (which is equivalent to around $220 today). That blew mine and everyone else's mind. I was a small time bettor...$10-$20 bets. We had just gotten married and were living paycheck to paycheck. She then looked back at me and said "How else are we going to pay for this trip?" Again, everyone started laughing.
Now, on to gameday. We arrived in Chapel Hill about 4 hours before the game and walked around the campus. What a beautiful campus...especially that time of the year. Late in the 4th quarter, Auburn led 17-10 and had the ball with a 3rd down and 1 around UNC's 20 yard line with about a minute left in the game. Auburn ran it up the middle and was stopped for no gain. I instinctively jumped up and pumped my fist. All of the Auburn fans sitting around us looked at me like "Are you crazy?" I then hollered back "I can't be the only one here that has Auburn -7.5". Everyone laughed. I knew if Auburn had made the first down, we would have just run the clock out. Instead, Win Lyle kicked the FG to make it 20-10. Auburn held on and we won the $100 bet.

Beating your rival for the national championship is pretty great. The 52-20 beat down of FSU for the '96 title is hard to top.

Beating Clemson in the NCG. I knew we were going to beat them but knowing we were beating virtually the same team (and probably better) that had destroyed Bama's all time best team in 2018 was very nice.

For OOC regular season games: Mizzou 6 in a row vs Illinois from 2002-2010 seasons. Brad Smith introduction to Maclin introduction and the important 2007 game (Illinois played in the Rose Bowl that year).

You're confusing the 2017 epic fail by Sumlin with the NEAR-epic fail by Sumlin against UCLA in 2016.
A&M led 24-9 mid-4th quarter, UCLA tied it with about 2 minutes to go. Justin Evans intercepted Rosen with about a minute left and the pass into the endzone for Seals-Jones fell incomplete.
In overtime, on 4th and 1 from the UCLA 1, A&M ran an option and Knight kept it for 6.
UCLA was stopped on 4th down and A&M won 31-24 over then #16 UCLA.

2006 beating Clemson in the Music City bowl. They complained all week about having to play us...and we beat them.
56-10 and 45-13 back to back beatdowns of Louisville in 2018 & 2019
VT in the 2019 Belk Bowl after all the crap their players pulled all week. But also the manner in which the game ended.

1982 Bluebonnet against Florida. Didn't mean much when it happened, but in hindsight, that wasn't a bad Florida team. I remember being disappointed that we were playing Florida, and then disappointed that we didn't win by more points, but we've been so dismal against Florida in SEC play that I now cheerish that old win.

Texas for sure. Easily the biggest OOC win for LSU in a long time. It was a true road game in a legit atmosphere. Instant classic.

Aggies blowing out Ty Detmer and blowing out both his shoulders in the Holiday Bowl after he and his coach Mormon whined about not playing a better opponent. That San Antonio **** got whooped by Baton Rouge’s Bucky Richardson that night

Aside from our NCG, I really enjoyed beating JoePa and Penn State in Orlando in 2003. They thought they were going to kill us. We held them to 9 points.

I would Say besides the championship games (19,03,07,58 in that order)
Ending the U back in the 2005 Peach Bowl was really fun. They have literally never recovered.

Miami is pretty up there for me....man those fricks were cocky! One Miami fan actually bet his gold turnover chain that they would win...my buddies dad still has it...was surprised he made good on it
Also, I remember it feeling pretty epic when we beat the crap out of Notre Dame in the Sugar Bowl in 2006
