Apparently, you don't either.
When you wrap pork, you destroy the bark. The bark is the key to the it all. Wrapping BBQ changes it from smoked meat to braised meat. There's a reason they call wrapping meat "the texas crutch"...

We have the best brisket but your right that we have no idea how to make pork. Have to go east of here for that. I've had some pretty amazing bbq pork in the southeast for sure.

So many terrible takes in this thread. Like I said in the other bbq thread, brisket would be a lot more popular in other states if yall actually knew how to cook it. Quite a few places have practically perfected it here in Texas and there is nothing, and I mean NOTHING, that tastes better than a perfectly smoked brisket from a place like Truth in Houston, Snows in Lexington, or Franklin in Austin.
We also do fantastic ribs so that should satisify yall out of staters when passing through. I will admit its hard to find a place that makes a stellar pulled pork, thats the one spot we could probably do some learning from other states. But Texas can hold its own in the pork world with ribs and bacon burnt ends out of pork belly if yall are going to declare bbq is pork based (its not).
Lastly, all you need to know is why are restaurants popping up around the US and world that are "Texas Style"? Why not "Georgia Style" or "South Carolina Style"? Because the rest of the world already knows where the best bbq comes from.

Both are good but totally different.
Bearded pig is what one might call urban bbq and its a mix of styles and meats.
The pig is a traditional bbq joint eg a dump, at least the location I go to, but to me that’s bbq. Also for my money they have the best ribs in town at the moment, especially when paired with their sauce. It usually bounces between them and Bonos which is another good local place.

Beef ribs taste like shite. Aren’t tender. Dried leftover steak. Might as well chew on a T-bone steak bone.

Properly smoked brisket and beef ribs can’t be beat. Fact.
Problem is they’re much more difficult to smoke than pork. Bad brisket is terrible and that’s all that was available in most places for a long time. The bbq revolution that has happened once the central Texas places got discovered and people put it on social media has been incredible. It wasn’t long ago you couldn’t get a decent slice of brisket in any major city in Texas. Now it’s just ridiculous how many places there are.

I like well cooked brisket... but I don't consider it BBQ. It's just brisket.
