Good People, Ghost Train, and Avondale here in Birmingham. Huntsville has some good craft beer establishments as well, from what I understand, but I’m not as familiar with them.

In GA Terrapin and Creature are pretty good, but Terrapin has become borderline mainstream after being bought by MillerCoors and featured at the ballpark.
Best TN brewery is Ghost River although that's in Memphis. The breweries in Knox aren't anything special TBH.
Best beer in the south is in NC by a mile.

Breweries per capita: As far as Pcola goes. Pensacola Bay and Gulf Coast are the only ones I've seen bottled/canned and for sale in a store. I've seen most of the others on tap around town and in the area.

STL: Urban Chestnut Brewery and Schlafly. Center Ice Brewery is on the up and up though.

Yazoo is Nashville is pretty good. I like their Dos Perros and Pilsner.

In Central Arkansas it would be Lost-Forty.
In NW Arkansas I'm partial to Ozark Brewing Co.
Core is probably the biggest one in NWA.

I am a big fan of Chandeleur Brewery in Gulfport, MS. They have some tasty beers. My wife (no pics) loves their sour beers.
Lazy Magnolia in Kiln, MS, is great too. They have awesome food at their taproom and their NEIPA is one of the best I’ve ever had.
Natchez Brewery (obviously in Natchez) May be the best in the state. They put out awesome beer after awesome beer. Their Push Pop IPA is tremendous!
Honorable mention to Luckytown (Jackson) and Threefoot (Meridian)

River Rat is the most popular one here in Columbia, at least on a widely distributed level; Steel Hands is our newest and biggest so far, it's become quite popular as well. As for the rest of SC, Charleston and Greenville have some great breweries. Palmetto in Charleston is the oldest one in SC (I believe), I recently had an IPA and DIPA from Low Tide Brewing in St. Johns and was highly impressed. One of the most interesting beers I've ever tried is from Full Spectrum in Rock Hill, it was a Reaper Roast Amber with some Carolina Reaper in it. Not too strong and well balanced, it had a lot going on.

Southern Prohibition and Natchez are probably the best breweries in the state. Can’t believe I forgot about SoPro.
SoPro’s Crowd Control IPA is a hoppy beast. Their “light” Pilsner is easy drinking. We recently attended an event at an Ocean Springs Bar where several of their limited release beers were available and all of them were delicious.

I don’t care for Lost Forty. I like the smaller breweries that grew their product. The Lost Forty folks are into several ventures. Had a lot of financial backing to jump into the market when craft breweries were popping up in 2014.

Visited them in 2016 when they were still in that small building with no AC. The owners were great. And the beer was better.
