Ever go to Moonlite Inn Owensboro, KY?
They barbecue everything. Mutton, pork, beef, chicken, etc. All hickory smoked. Western KY has some good barbecue that is a blend of styles.
I had some in Grand Rivers that had a mustard based sauce. Cave City joint was sweet barbecue.
If done well I am good with all the styles.

I have been known to drink mustard (and vinegar based) bbq sauce right from the bottle....

When hash is done right it is about as enjoyable experience as you can have with your britches on...I can make tolerable Brunswick stew but try as I might my hash is wanting something. It is an art when done right...

This post is a great example of why Oklahoma and Bajo Oklahoma ain't the south...hearing or reading the word ain't leads folks not from the south to assume the person using the word is stupid, ignorant, uneducated or otherwise impaired intellectually. Southerners have used this bloviated prejudice as an advantage against such people since before the war of northern aggression and it is exactly why so damned many of them find themselves living and working in the true south and doing our bidding. Bless their hearts.
Calling a perfectly smoked brisket with a nice bark anything other than what it is, smoked brisket, is no more indicative of an intellectually challenged person than calling that brisket BBQ. I smoke all manner of fish....ain't nobody ever mistaken any sort of smoked fish as BBQ. I smoke cheeses, deviled eggs, turkeys, chickens, all manner of wild game and sausages. No one would call any of it BBQ just because it is a smoked meat or some other form of food which had been prepared on a smoker. Smoking a brisket is no more barbecuing than grilling burgers and hot dogs. People in the pacific northwest will call the latter BBQ...they are as wrong as anyone claiming smoked beef is. BBQ is pig and hickory...everything else is a fraud. It may be the best thing ever eaten but it ain't BBQ.

Anybody who don't like squirrels and dumplings is gastronomically challenged. Proper Brunswick stew requires a couple of tree rats. ALL southern food is based on cheap ingredients that poor people had access too...in fact all traditional ethnic and regional cooking is based on cheap ingredients that poor people had access to. Very few people would call waygu beef comfort food but anyone with a brain between their ears would call collard greens comfort food...

I agree. Simple vinegar and red pepper is sufficient for me. Its my go to anywhere. When I smoke a butt though I apply a light coat of yellow mustard which is basically vinegar and some spices.
