Respect.

But if you gotta slather your finished products in fricking mustard?
True. Yet, a still not widely talked about secret when grilling ?
Paint your stuff, beef pork or poultry, in cheap arse mustard. Then cook indirect. The mustard congeals. And locks in the moisture for the meat. Works especially well on pork and poultry.

I love brisket, but I think my favorite sauce is mustard based.

Don’t you have a dildo to wave around while you stand in the road and scream at the sky?

I like both. Not a lot of people do pork here. A pork loin or ribs here and there. Pork ribs are probably more common bc beef ribs can be pricey. But I do enjoy mauling a beef dinosaur bone rib once in a blue moon.
How is that not good to y’all??

The best BBQ I ever had was near Brunswick. True story.

Well done brisket is phenomenal. Much respect.
A well marbled ribeye is the finest of all meats.
I’m a cattleman.
The Hog is BBQ.

That presentation looks like some yuppie NYC shite. Would not eat that.

My go to place in my nyc years was Hill Country BBQ Market. Mainly bc they had/have Shiner on tap.

Brisket is far better roast beef than pulled or chopped pork but the latter is actually BBQ while the former is actually roast beef. Any civilized person knows this thus the confusion in the lone star state...the only civilized folks there are from someplace else and ain't been brow beaten into thinking scorched roast beef doused in ketchup and served with pork and beans is BBQ.
I generally don’t care what people like or don’t like to eat, or care what they call their food, but repeatedly stating a perfectly smoked brisket with a nice black pepper and salt bark is “roast beef” pretty well shows you to be a dipshit of the highest order. Also, you seem to think if you constantly use “ain’t” in your BBQ posts it will validate your nonsense. Like “only a dumb fricking hillbilly knows what dat der real barbeeeeeeq dun is and what it ain’t”. To the contrary, it just makes you look stupid.

Sounds like you’ve had this debate before.
I get that people are going to stick up for their region. But denying the greatness of brisket is pretty asinine.

You would love Barbacoa if you tried it, Lonnie. The classic Mexican style smoked cow cheek and tongue taco they sell everywhere. Insanely greasy tho. I think it’s grease. It’s a really fatty piece of beef.

Can I get it with a side of mustard?
