True. Yet, a still not widely talked about secret when grilling ?

Paint your stuff, beef pork or poultry, in cheap arse mustard. Then cook indirect. The mustard congeals. And locks in the moisture for the meat. Works especially well on pork and poultry.

I like both. Not a lot of people do pork here. A pork loin or ribs here and there. Pork ribs are probably more common bc beef ribs can be pricey. But I do enjoy mauling a beef dinosaur bone rib once in a blue moon.

My go to place in my nyc years was Hill Country BBQ Market. Mainly bc they had/have Shiner on tap.

You would love Barbacoa if you tried it, Lonnie. The classic Mexican style smoked cow cheek and tongue taco they sell everywhere. Insanely greasy tho. I think it’s grease. It’s a really fatty piece of beef.
