Maybe it's the locals who don't know where to go. Every time I go to Birmingham on business, I ask for good BBQ. Without fail, Jim & Nick's or Golden Rule are the 2 spots my bama associates recommend we go for lunch.

Texas has the worst BBQ.

Texas has the best. Others still have really good. The ultimate best piece of BBQ is brisket. I will also accept beef ribs.

I talked to him when the place first opened, he said he wanted to come to Birmingham because it's such a great food scene. You can get that gay vinegar sauce there, but you can also get Alabama style sauces and he said he's got a lot to learn from Birmingham and Alabama

Eh. I love some good brisket but I wouldn’t say it is the ultimate bestest be all end all. It’s certainly tough to get right and nobody does sausage and brisket like central Texas (sorry Houston - we still frands though Pinkerton’s). There is a thin line between good brisket and salty roast beef. Pork is generally always a safer bet - ribs and chopped/pulled can be found across the south. True talent is doing whole hog correctly and that’s where the Carolinas set themselves apart. Especially if they’ve got the skin crispy and chopped into the BBQ.
Wilbur’s in Goldsboro, NC...might be the best on earth.

There is a town 100 miles north of Memphis in the bootheel of Missouri called Holcomb (about 10 miles from where I grew up). In downtown Holcomb there is a bar/restaurant/pool hall called Strawberry's BBQ. Their ribs are the best you'll ever find, but their show stopper is their Pork Steak. Most people have never heard of a pork steak. It's big and thick, but so tender you can cut it with a fork. The seasoning, flavor, and sauce are off the charts. Strawberry's BBQ

If y'all are ever traveling along I-10 and are in SW Louisiana, Bourbon Street BBQ in Westlake (right outside Lake Charles) has the best brisket I have had outside Texas and top 3 overall. Even my when friends who compete at the big Houston cook offs talk about how good be it is.
But to answer OP, Texas overall, but all the southern States have there spots. I have had great BBQ a ton in Bama too.

You can get pork just as easy as you can get beef in Texas.
But no one is doing true BBQ anymore anyway.

We have some great spots here that have sprouted up recently but the BBQ capital will always be in small central TX towns. Luling, Lockhart, Belton, Lexington, Taylor etc

Hate to pile on but few like Jim and Nicks - they are way down the totem pole. IMO, they are edible but nothing special. IMO, Golden Rule is better, but BBQ like most food, is very subjective. But few I know care much for J n N's.
I still long for Ollie's but there is a lot of good BBQ in Bham.

NC BBQ is by far the best.
Lexington is 1st. Eastern NC, Wilson, is 2nd.
Texas has brisket, NOT BBQ
I actually like SC BBQ as well - mustard, hash and rice.
