Chocolate Gravy is a delicacy of the mountainous areas of the South.
Appalachia and the Ozarks. I'm honestly confused that other areas of the country have no lineage of it in their cuisine.
Was one of my favorite breakfast treats that reminds me of my momma (RIP).

From my earliest childhood memory until I was about 24, my mee maw prepared a Sunday spread that was ready to eat at 1:00. Anyone was welcome and my siblings and I would always have friends wanting to spend the night so they could go and eat at mee maws on Sunday. We would eat lunch, watch the Braves or play in the yard and eat again at around 5:00. Never ran out of food. And it was a huge spread every week.
Condiments were on one counter and usually included:
Pickled peaches
Bottles peppers in vinegar
Canned pear halves (with mayo, shredded cheese and a cherry on top)
Sliced tomatoes
Cantaloupe
Sides: there were always at least five of the following
Pinto beans
Butter beans
Lima beans
Stringed beans
Boiled cabbage
Fried okra
Mashed potatoes
Macaroni and cheese
Buttery white rice
Sweet potatoe casserole
Collared greens
Broccoli cheese casserole
Meats:
Fried chicken
Ham
Roast beef
Fried chicken was usually 2 Sunday out of a month.
Desserts: always one, and often 2 of
Banana pudding
Apple pie
7 layer chocolate cake
Bread: one of below
Buttermilk biscuits
Cornbread
Yeast rolls
Gravy:
Milk gravy always. Put over biscuits, mashed potatoes, chicken, and rice.
I wish that my 4 kids could have experienced this. It was a routine and privledge we took for granted as we thought it was normal. We assumed everybody went to a mee maws every Sunday with family coming in and out all day between 1:00-6:00 to graze on delicious home cooked food. I didn't realize until she got to old and feeble how much love and effort she put into pulling that off every week. She loved doing it as it brought the entire family together at least once a week. Between our family and my uncles family there were always at least 12 of us there and there were always at least 2-3 friends of the kids. I am 46 now and my buddies from school still talk about Sunday's at mee maws. Really miss those days.

I like how you divided b/c it really needs to be broken to do justice to our native cuisine. Playing off yours, here is mine.
Breakfast: Biscuits and Sausage Gravy. Very good. We call it "sawmill gravy." Add salt cured ham and cane syrup (The gravy is for the entre biscuit and the syrup is for the desert biscuit.)
Lunch: Mine's different;. Dried limas cooked with hamhocks on rice. Hoe cake cornbread (the stuff cooked paper thin in a skillet.) Greens, preferably collards.
Dinner: Fried Catfish and Hushpuppies. I like the way you think. Add cheese grits and homemade cole slaw, not the stuff from the bag.
Dessert: Pecan pie. That's Pee-Can

Baby red potatoes boiled in crab boil. Might as well throw in some ears of corn and smoked sausage.
