...either because it's too costly, too difficult for beginners, not available in your area, or because there's too much stigma attached to it.

Restoring and modifying Jeeps and other classic 4x4’s (Broncos, Scouts, etc.).
Gunsmithing, as well. Not just building AR's, but modifying and repairing all manner of shotguns, rifles and handguns.
I just don’t have the time or tools. Maybe that’s what I’ll do when I retire.

I've always wanted to try my hand at building a guitar. Even if it sounded like shite...it would still be a guitar I built.

Drone photography. I should really just buy a cheap drone with a camera to see if I’d really enjoy it but I know me. I have to go full hog. My fear is that I’ll buy an expensive kit, play with it a couple of times and then add it to my collection of “I’ll surely get back to this later” toys. Just can’t pull the trigger yet.

Ah frick, that's another good one. It seems like a fun thing to do that I would enjoy for a few weeks and then get bored with it. Now I'm out $1k

Model airplanes, not the actual kind you can fly, just the plastic models, are pretty accessible. I put one or two together every winter and it's not terribly expensive. Maybe $60 your first time. 20-30 for the model, and another 20-30 for all the paints, glues, and brushes. After that it's not bad. You should try it.
I'd also like to get in to wood working...more specifically I'd like to make furniture.

I have always wanted to learn how to cut gemstones from rough. Always been fascinated with that, but expensive a hobby that would be.

Gem Cutting Machine Recommendations
So the machine I found recommended in the first google search is pricey but I guess not insane for a hobby if you really decide you're going to commit to it.
No idea where you'd get a hold of uncut gemstones, I'm sure there's some easy answer I'm just not acquainted.

I know you can take a class at a place called The Gem Mine in Pigeon Forge, and actually cut a gemstone. At least that used to be the case. It is a fun place to visit if you are going through there. In North Carolina, you can actually sign up for serious classes (a week or two worth iirc). I researched it awhile back, but my schedule never lined up with the classes.
You can get gemstone rough easily on a number of websites. Even Ebay has thousands of pages of that. But yeah pricey depending on the type of stones your want. Lower tier ones like amethyst/garnet can be had for fairly reasonable cost until you are ready for the big stuff.

I had a visited a friend of a friend who is a doctor and he showed us his workshop. WOW! He made all the furniture in his house. He had a space as big as a 4 car garage.
