Silly thread but I’ll bite.
Lived in North Charleston in 70’s . Good slow cooked pulled pork with that mustard based sauce. Yum. Get a hamburger bun, throw on some pork, a scoop of cole slaw, with a dab of sauce. Some goodvstuff. Now, been in Tejas for years. That’s Texas for you Carolina folk. Now, you find plenty of mighty tasty pork butts, smoked 18hours over a pit of oak. Makes some damn fine pulled pork. Throw a tortilla on the grill, get it warm a slightly crunchy. Add some pork, sweet baby rays, Mexican cheese, a few jalapeño and yum.
I’m not even gonna get into how we cook brisket out here. It’s a religion.

That's what I was trying to remember, thanks. Arawak (Carib is close enough to Indian) was the specific word I was struggling to recollect.
I don't care mustard-based barbecue but I'm not the High Lord Executioner of all things barbecue...yet. But I do have a suggestion for South Carolinians and anyone who has some mustard-based sauce lying around -- I was staying at a friend's summer home in Maggie Valley in the N.C. mountains and he had some mustard-based sauce (don't recall the brand, it was a few years back) and braunschweiger. I fried up a few slices of the braunschweiger and dipped bites of it in the sauce since I like fried braunschweiger and dark mustard. Wasn't bad at all, at least to me. Maybe worth a try for y'all? Assuming, of course, you like fried braunschweiger. It is an acquired taste, I grant.
Edit: woudl probably also work with liverwurst, liver mush, or tripe.

People have redefined BBQ over the years. I would say over the last 50 or so the definition is clear.

This guy gets it... I mean... maybe not the *worst* is wonderful... but if you can see the plate through to completion, it wasn't bad. And if it's at least worth considering going back for seconds, you probably made the right decision to partake.

I'm sorry that shite looks nasty. Any Texan ever been to Casey's by San Antonio? Is it still open ? I miss the all you can eat ribs and the tick sliced bacon.
