Gator is mighty tasty...but, I must admit....I have never BBQ'ed gator.


I once got some gator claws from a place off I-10 and slow grilled it, though. I think my heat was a little high, and it ended up being tough.

The place was just east of Lake Charles, if I recall.

Aside from the fact that decent brisket is a helluvalot harder to make than a pork butt, the best pork spare ribs I've ever had were in Texas as well.

I'll tip the hat to whole hog, but a spot on beef rib or great brisket is way harder to find than good pork Q.

Been to Texas many times, have family there. The steaks and Mexican cuisine are second to none. The brisket is always superb. I stand by my opinion that beef will never be BBQ. Take it for what its worth, argue about the sauces or not, but beef is just not BBQ, nor can it be BBQ just chopped up beef.

All of the best bbq joints in South Carolina are only open on Thursday, Friday and Saturday. Always found that frustrating...I want bbq on Monday, Tuesday, Wednesday and Sunday occasionally as well, damn it to hell and back.
