I'll admit I like both pork and beef BBQ. Pulled pork is my fave, followed by brisket, ribs on down the list for me.

Traditionally BBQ is whole hog smoked over a pit.

Best BBQ I've had yet was at a roadside joint in South Carolina called Soggy Bottom BBQ. They serve a brisket sandwich on an onion roll with Havarti cheese and horseradish sauce. It's frickin wonderful. I've seriously thought about driving back out there just to get some more.

Gas Man is right in that Rodney Scott opened a place in Charleston, but the original in Hemingway is awesome. It's like stepping back in time, as Williamsburg County is like SC's version of the MS Delta. That drive is worth it for the cotton fields alone.

Damn, you suck for making me agree with the aggies, but limiting meat for barbecue is at least short sighted if not retarded. Beef ribs and brisket are heavenly as well as pulled pork, sausage (all meats), chicken (ala beer can) and unlimited wild game.
I won't weigh into the dry versus wet rub subject, but I have had great meals featuring both methods. Now, start putting a load of mustard in the sauce and you lose me.

My favorite BBQ place in Atlanta (Fox Bros) was started by two guys from Texas. I like Daddy Dz as well.

Agreed. Though I do live in Louisiana and love the seafood we get here, I've had very good seafood before in Mobile and all over Florida. Though I've never been to South Carolina, I'd have to imagine that they've got some good stuff there too.

South Carolinians east of Sumter and north of McClellanville do not eat mustard based BBQ. It is strictly pepper vinegar. In fact, many of us in the Pee Dee region of SC consider mustard based BBQ a sin. Go to Scott's in Hemingway, Brown's in Kingstree, McCabe's in Manning, Schoolhouse in Scranton or Shuler's in Latta.
