I love brisket, but I have had bad brisket, and it's a crying shame when brisket is prepared poorly.

Louisiana has most of the good food items. I'm sure on very localized levels there are massively overrated things - like Momma Gs at Auburn.
But across the whole spectrum, the only thing I can think of that is widely celebrated but definitely overrated is...

You could throw in a lot of the Louisiana food before beignets. Like maybe jambalaya or crawfish etouffe. Not sure what kinds of food you other areas are known for. Pork Rinds? Kentucky puts chili on pasta? TheAuburn Mama G's "nachos"?
