At least Randolph is playing inside at LG. I think he’s a lot more likely to play decent there than Owens’ odds were at RT.
If Cohen is just a different guy and isn’t a legit starter anymore (to be clear, I don’t believe this to be the case), I wouldn’t be surprised to see Booker get some action if Randolph struggles. I think he’s been very impressive so far.

If Randolph starts at LG, I'm curious who will be used in formations where Randolph played as a blocking TE/extra Tackle. Is it possible someone replaces him at LG and he plays the role of blocking TE/extra Tackle in those formations?

Doesn't really make sense given that he was older than Cohen last year and Cohen was the starter.
He's obviously the best option RIGHT NOW. He also was a top-200 player coming out of HS, so based on how some here evaluate OL, he's a talented guy also.

Cohen was our second best OL last year. The fact that he’s allowed a career reserve and goal line TE take his spot is troubling.

Cohen was out for a while. I'm sure when he is mentally and physically back in shape he will be back in the starting role. Meanwhile it is good to have a backup. He did not allow someone to take his spot any more than someone that is injured allows someone to take their place. I'm glad we have him back and I'm sure when the time is right he will play.
