Didn't take any more pics after this because you want to eat it piping hot.
You want to pour all of that heroine on the shrimp though when you serve it. ANd have some warm French bread sliced up for dipping into the heroine. That's honestly the best part actually.
Pairs well with ice cold canned Bud Light.

Wish I could partake in this venture today but, alas, just got dogs and brats for the afternoon (no company to cook for and the rain may impede progress later on).

I have to say, it's pretty unpatriotic to worry about your cholesterol on a day like this...
This is how you honor all those sacrificed lives? By eating dry tasteless baked chicken and rice cakes with tap water? You might as well just go spit on their graves too.

The amount of cholestoral in my blood next week directly affects how much insurance I can provide the descendant of several war heroes including a Silver Star in Iwo Jima. I'm choosing to honor them by *not* stuffing my gut with saturated fat for Memorial day weekend, then making up for it on Independence day after all the numbers are in, and insurance in force.

So after the membranes were removed the baby back pork ribs were marinated in a coconut, pineapple, and orange juice mixture. The gas/wood smoker with the cold smoke generator attached to it was fired up (some on here have seen this set up before).
The slab was cut in half and put in a rib rack in the upper chamber of the smoker and smoked about three hours on low-medium heat with no sauce applied--these were dry ribs. Some rub was liberally applied along the way. After that, each half was given a little time on the grill with heat on each side for not too long--just to firm things up a bit and seal the rub spices in. Then they were taken off the grill and allowed to cool down a bit before consumption.
There was some orange cream soda to drink pictured alongside the butt rub.
Some BBQ sauce, white bread, and BBQ beans accompanied the ribs.
And to close it out a shot of the rack with the obligatory wedge of cornbread in the picture.
It was a good day to kick off the holiday outdoor cooking season.

I haven't heard any in the central part of the state. Those may be stragglers. We've had a good chorus of them the last several years but the masses of them are not due to return for many years. LINK

I served my 3 racks of smoked baby backs, 15 grilled leg quarters, tater salad, slaw and beans before I saw this thread. No pictures at all.
