They were closed yesterday so we just went to pappadeauxs... hoping to swing by if I get any non scheduled meals before I fly out.

How much is 5lbs dollar wise?

Looks like $10/lbs for brisket.

We got the Trough. $75 for 1 beef rib, 1 lb pork rib, 1 lb brisket, 1/2 lb pulled pork, and 1 side.

I forget how much it is but if you order so much you can skip the line. I think it might be 5 lbs worth.

If you want to get the meat sweats order a Pitmaster and go to town.

I will give you native Texas boys some credit, y’all are serious about your brisket.

Seriously though I put it in my ceramic grill unwrapped for a few hours after I sous vide it for the best results. Works better than just pure smoking it I have found.

For steaks nowadays I don’t even use the grill. Sous vide then charring in a cast iron pan. Best steak you ever had in your life.

Never grill a steak. That’s amateur hour. None of the big steakhouses do it... and I tend to think they know a little about steaks.

Thought about getting a sous vide just haven’t pulled the trigger.

I usually don’t because of the time it takes, but as long as you get it screaming hot then you can grill a steak. I usually reverse sear in cast iron with butter.

I didn’t have a chance to go to pecan lodge. We ate texas de brazil and top golf as a team, and my only free night (Monday) they were closed. I did get brisket every day I was there in various forms but all were a let down compared to my intentions.

Back to the twin cities and the land of sub par bbq

Yep, used to do all my steaks on a grill, then found about doing it in cast iron and haven’t looked back since. So much easier and same results and taste.

Fargos and Kreuz are pretty decent if it’s an on day for them. Fargos’ is now more hit and miss than ever after their third move, but when it’s on, it’s dang good.
