I would say the Alabama softball title in 2012, first SEC title in softball.

2017 Cornhole SEC Tournament Champions
ETA: People think I’m joking, but I’m not. In 2017 my brother and I went to the SEC (football) championship.
They had all the fanfare set up early, so we walked through it, and they were having the official SEC cornhole tournament. It was doubles. All the SEC teams were there. They had a big bracket and everything. Every time Georgia or Auburn played, a crowd would gather around them.
It was televised on ESPN2 I think. Georgia beat Kentucky in the championship match and by the end there were probably 500 Georgia fans gathered around the match.

I'll go with the 09 baseball title
Program had fallen off after Skip retired and it made baseball fun again
I wish LSU would have won a womens basketball title when they had Augustus and Fowles
Was hoping for another track title last year before COVID
and a beach volleyball title before COVID
LSU has had the talent to win a gymnastics and softball title as well, can't get over the hump
They were robbed a few years ago in gymnastics - should have won but they had already preordained OU as the national champs

2019 football was pretty awesome. Greatest season in NCAA history, and you can make an argument for GOAT team. That might be recency bias though.

2017 Baseball beating LSU in the finals was pretty fun, but I'm going to go with 1996 Football title over FSU. It was a pretty good day.
