But many people from the northeast and midwest see Texas as a southwestern state.
And when you think of the different foods that could represent Texas...
both Tex-Mex and Texas Chili are pretty much southwestern as opposed to southern.

Nothing about Texas stands out as a state. It’s one of the most overrated states in the entire company. There’s very little scenery and the heat is unbearable in the summer. The only reason why people move to Texas is because of jobs, not for retirement. The cities in Texas (Dallas, Houston, Austin) have very little culture. They’re sprawled, artificial, corporate chain metropolitan areas that blew up in the last 20 years due to job opportunities for transplants.
To act like any of the Texas cities even come close to having the same culture and diversity to cities such as San Francisco and NYC is fricking laughable. Both of those cities have more culture and history in the past 100 years than Houston, Dallas, and Austin do in the past 20 years.

For Alabama I’ve always loved our take on BBQ, but admittedly that might be nostalgia.
I can say that one of the funniest interactions I had was after taking a job in Baltimore the owners wanted to take me to dinner. I assumed it would be something Maryland was famous for, like crab or some other seafood.
Nope. It was a BBQ place. They (one from California and the other from Canada) said, “Isn’t this the best BBQ you’ve ever had?”
I had to be honest and tell them no… it was good, but I’ve lived in Alabama, Georgia, Mississippi, and Oklahoma.
That said, I love getting authentic gumbo when I’m in Louisiana. There’s a few places that do it well here in Virginia, but the few times I’ve been to Louisiana the kind I got there was way better. My friend, before she passed away, would take me to this hole-in-the-wall place in New Orleans. Damn I wish I remembered the name of it.

That does sound really good right now.
I love the food around where I live, but I do miss some really Southern food from time to time. The Shenandoah Valley region of Virginia cuisine is more South-adjacent.

Biscuits and chocolate gravy is what always ranks highly on food tier lists for Arkansas.
