With a gumbo, I usually just add extra veggies and double down on the proteins - I don't eat my gumbo with rice. Always use andouille sausage and chicken. Seafood gumbo is great, but I feel that it's a wasteful use of expensive, good meat.
Lately, I've been on a kick of serving crawfish or shrimp etouffee sans rice over fish, like a red drum or red snapper.

Mea culpa: Got my tooth set too late in the day, so I just ran to the store for some Zatarain’s jambalaya. Has been a “go to” for quick and easy for a while. Threw in sausage and some shrimp I needed to use.
Will still try some Cajun Ninja stuff, though.

Awesome.
My Dad had a huge garden in our backyard that included them. Mom would add the holy trinity (celery, onions and bell pepper) along with shallots and seasonings to them.
Sometimes she would add ham, sometimes bacon, sometimes pork.
Pair that with french bread and butter (or cornbread), and a big salad. Great Monday supper...

See, this here is where the coonasses work their damned devil magic......they can do this properly at about 18 months of age..if you ain't a coon arse you can work at it for years and get it close but you need some kind of coonass voodoo or something to get it right....

This is easier said than done. I get it right about every one in three or four tries and I love cajun food. I'd eat Gumbo all through the winter if the wife would allow it. And RB&R is one of my favorites after New Years

Indeed. I watched that Cajun Ninja video about making a seafood gumbo. That roux kept getting darker and darker, and I was just sitting there like:
