I will send you a chicken and sausage gumbo recipe

Anyway easy start is 1 cup cooking oil + 1 cup flour and keep stirring until dark peanut butter color. Then, add finely chopped onion (2) and keep stirring for 8-10 minutes. Add finely chopped celery, garlic and bell pepper. Keep stirring for 5 minutes.

Add chicken and brown the chicken, adding salt + pepper + Tony’s . Add chicken broth while stirring and browning chicken

Add sausage + bologna + luncheon meat + salami and keep adding chicken broth and water. Allow to low boil for one hour and then simmer 2 hours and stir every 15 minutes

You don’t need harder to find ingredients to make either unless you’re trying to make seafood gumbo or crawfish etouffe. Not to be a smartass, but you can find hundreds of easy to follow recipes by googling. Making a good roux is the key to both and that’s not something that can just be written down but rather something learned by doing it and preferably having someone teach you. Something I do that many don’t for chicken/sausage gumbo is using bone-in chicken thighs instead of breasts.
