There are a lot of guys who, if they had just kept coaching at their highest level for another 10 years, would be at the top of the list. Most of those guys at the top aren’t there because they are the best, smartest playcallers. They outworked people. They got to the office at 6 am and got home at 10 pm. Day after day, year after year. And they are taskmasters of their assistants, but fair. They have some slower times, but their main attribute is they outwork everyone.
Most people can’t handle that grind at all. And those that can can’t sustain it for 20 years.
There are probably coaches who were “better” than Bryant and Saban. But they didn’t have the combination of genius like Spurrier or Leach and the work ethic of Saban or Bryant to be the greatest.
I love Mike Leach. Amazing, amazing coach, motivator, and a creative genius. But he was notorious for showing up at 8:30 am and disappearing for a few hours here and there to… do Mike Leach things. If you had instilled a Nick Saban or Bear Bryant work ethic in Mike Leach, and to a lesser degree Spurrier, we would be arguing over which one of them was the greatest ever.

I grew up with one of the world's most famous quarterbacks. Although gifted with natural talent, it was his superhuman work ethic, focus, dedication and determination to win that set him apart, even as a kid.
A few years ago he and his family did some pretty awful things in waging a campaign against someone else we grew up with to "do what's best" for another member of their family. The saddest part was that none of it had any affect on the trajectory of this family member's career.
I asked another mutual friend how he could do something like this and I will never forget his answer. He said people who succeed at the highest levels in life, like a Pro Bowl/MVPer QB in the NFL, don't think like you and me. Every minute of every day he thinks about what he has to do to win, at any cost.
Many are born with natural talent, it's those who have the crazy work ethic, like Saban as you mention, that become legends.

It isn’t so much that they love to win. They hate to lose. They hate to lose much more than they love to win. Everything is a competition and they can’t bear to lose any of them. And if you never lose, then you usually win. That makes them different.
If a normal person wins a national championship they react by celebrating reaching the highest achievement.
For a “can’t stand to lose” person winning a national championship just motivates them even more to do it again.

Coach Saban at ALABAMA beat teams he was supposed to beat. The Crimson Tide won 100 consecutive games against unranked foes under Saban and went 14 years without losing a game to an unranked opponent. Beat the teams you are supposed to beat.
Oklahoma's 47-game win streak under Bud Wilkinson. That one feels a lot like Joe DiMaggios 56 game hitting streak.
