Because a long long time ago Texas students were getting on a train to Dallas I think to play in a football game when the game was in it's infancy. The students realized they didn't have any school colors just before on boarding the train. So they hurried over to a nearby drug store and bought all of the ribbon that there was the most available in the store. Burnt Orange and white had the most on the spools so those two selections became the Texas colors.
