You have to put yourself in their mindset. 98% of football coaches never make any serious money. They start as grad assistants at 22 and spend the next 20-30 years getting shite pay, working long hours, forfeiting their Saturdays to work, and moving their families around the nation every 2-4 years.
When the select few FINALLY start making big money later in their careers, they feel like they have put in their time and earned it.

The huge assistant salaries are basically a relatively new phenomenon. In the year 2000, there were only 3 HEAD coaches that made $1 million+.
At some point, ADs have to quit throwing the Monopoly money around. I'd get it if I could too, but there's just no way some assistant TE coach or whatever should be pulling down a half million a year.
