There's a reason they hire from poor and bad countries.
Is it a career job? Not usually, but they're able to provide for their families if they have them, or if they're young, they can explore the world and learn English. They alternate getting off the boats in different ports.

There's a lot of factors. Biggest being type of collapse. If it's a zombie apocalypse, your plan might be a lot different than a nuclear bomb, pandemic, political uprising, etc.
People overestimate how well they'd do in these situations. There's almost always going to be someone more desperate than you to get what you have. Unless you have a small army of trained people and years of ammo, it's not going to work.
