Dales can really hook up steak, pork and chicken. And of course, bison burgers which we eat a lot of in Colorado.

Mississippi
- Fried catfish (must be farm raised)
- BBQ pork (pulled) or Ribs
- Chicken n dumplings (not the soupy flat noodle dumplins but the fat dumplings in a more gravy texture)

Auburn - bbq chicken with white sauce
State - Smothered pork chops and collard greens
Florida - fried snapper
Arkansas - no clue what Arkansas is famous for
LSU - chicken and andouille sausage gumbo or crawfish etouffee
Missouri - Kansas city burnt ends
South Carolina - pulled pork butt with mustard based bbq sauce

Crawfish etouffee, jambalaya, red beans and rice with andouille are all good options depending on your ability to make them and the preferences of your kid(s).

Yes, chili is definitely a southern tradition.

I like spicy food. It just doesn’t like me back so I have to stay away from it for the most part.

Yeah, especially red beans and rice has to be cooked by the right hands. Superb when done properly. Same with seafood gumbo. I've had terrible of both before. But that can probably be said of any dishes.

This is probably a really good list but I'll give a few alternatives:
Ark - something with a Tyson chicken and rice. They grow a lot of rice in Ark.
Florida - grilled grouper sandwiches
SC - shrimp and grits (or you could go Lowcountry low with slumgullion and/or hop-n-john)

New Orleans is definitely special food wise in this country. Especially considering it’s not really a big city. It would be in most people’s top 5.

Country Ham and biscuits, fried chicken, just typical Southern food. Y’all do bbq better than us, the Carolina’s do pork the best imo
