I def wasn't limiting it to the Texas variety; that was just the context.

Georgia doesn't know shite about BBQ

Pretty sure that's from a "Texas BBQ" spot in NYC or Brooklyn.
Yeah, I'm pretty sure that's the pic they used for a "Brooklyn is taking over BBQ" article.

Brisket wasn't considered a BBQ staple until relatively recently. Even in Texas, the cut of meat wasn't front and center on any BBQ menu until the 1950's.
The Jews own brisket. I love corned beef, I love pastrami, both come from the brisket cut.
Texas rednecks tried to take it back in the last few decades. It's a clown cut for BBQ.
This.
The reason brisket is cured and slow-cooked is because it is a cheap, tough cut of meat. And you're right, it is a stew meat. People freak the frick out just because they're able to make a cheap cut edible on an outdoor cooker. Big fricking deal, give me prime rib or tenderloin over brisket every single time.

BBQ, no matter how it's cooked, is shite.

It never has been, and never will.
It's stew.
Sho ain't....
on both counts....

For clowns who live in a clownish state.....
BBQ requires a commitment from a pig and a hickory tree and a person with a lot of time on their hands. Roast beef is good, if done properly. It ain't BBQ.

On the contrary, it's cowboys living out on the range who get lonely.

Imagine taking culinary advice from someone from a state where boiled peanuts are considered a delicacy
Done properly boiled peanuts are fantastic. No sane person would consider them a delicacy any more than a sane person would consider roast beef slathered in ketchup and burnt to a crisp BBQ.

mesquite smoke tastes like shite.
It is due to the fact that mesquite, salt cedar and creosote bushes are closely related cousins one to another....if you need some creosote its entirely possible to refine it from any of the three.....for the un-cultured among us creosote is what telephone and power poles were coated with prior to pressure treating to prevent rot and bug infestation....it smells like tar or asphalt and is exactly the flavor imparted to anything smoked with mesquite....
Only some of that is true but it seems like it ought to be a fricking fact....mesquite sucks.

We just got widespread GA BBQ restaurants to actually smoke butts within the last decade or so
the BBQ I and anyone else grew up with in GA was largely bland chipped/pulled pork and half decent Brunswick stew
we probably shouldn't throw stones, considering the "Texas-style" BBQ influence is the reason why GA BBQ is finally climbing out of the southern cellar
You meant last couple of centuries, right? Surely you aren't suggesting that there has only been smoked pork butts in Georgia BBQ joints since 2014 are you? I was born in Atlanta in 1965 and you could not sling a dead cat in Atlanta in the 60s, 70s and 80s without hitting a BBQ joint that would make anything west of Tuscaloosa close its doors in shame. That scene did start dying out in the 90s due to the time and cost of doing real BBQ compared to what most places do today which is mass produced garbage including brisket. There is still excellent smoked pork to be had in North Georgia but it is hard to come by in Atlanta now....lots of shitty Texas BBQ in Atlanta thought cause its easy to replicate.

Why can't you let me troll Texas in peace?
I hate the Univ of Texas with the heat of a thousand suns.
I grew up in south Louisiana, and the best thing I have ever eaten is a beef rib from Terry Blacks in Lockhart TX.
There are a lot better trolls of Texas than Bar-B-Q. (But since its Texas, I do respect the effort).

Dumb take, Heirloom, Community, Fox Brothers, Das BBQ, etc. are all ITP and well above average. Hell, if anything, I can’t find decent BBQ since moving way north OTP.

I just had some brisket in Las Vegas that was delicious. Far and away better than the 20 years and thousand dollars worth of brisket I have tried all over the state of Texas. My problem with brisket seems to be with Texas cooks more than with brisket.
