I use Dukes. Which I think that's where the brown sugar works a bit because Dukes is naturally a more vinegary mayo versus others that may be more mild/sweeter.

I don’t think most people have the expectation for prime beef at waffle house. But whatever it is, the steak and eggs at Waffle House at the Flora Bama at 2 am is as good as any of the Texas brisket I have ever had. Maybe it is just the ambiance. I don’t doubt that Waffle House steaks are not the highest quality. But this whole thread is about how to make a trash cut of beef palatable. Waffle House has figured it out. Many barbecue joints have not. Maybe that is the secret to good brisket, get really drunk before eating it.

There are a lot of places that offer bad brisket, some that offer good and about 3 in Texas that I would consider superior.
Truly great brisket is only available at my house on my pit...and only a few of you fvckers would be invited.

Well that is what I mean. Your expectations are based on where you are eating.
I'm very picky about steaks and if someone asked about great steaks I doubt Waffle House is high on the list. If I did eat a Waffle House steak my expectations are not going to be high.
I just hate the regional crap as if somehow things cook differently by state, or like there are certain laws by state on methods.

The best bbg is a whole pig cooked over open coals, brisket can't hold a candle to that

From this thread I have learned there are about 25 people in the world who are capable of preparing delicious, melt in your mouth beef brisket. I hope one day to be fortunate enough to sample their work.

They are bit proud of it based on price per slice, but still very good. Also, one of the best breakfasts in Oxford, as well. Skip chicken on a stick on your next trip there, as there are much better gas station food options.
