I have also cooked brisket, very good, but it's either corned beef or pastrami. Smoking it for 16 hours to make it edible and then calling it King of BBQ is absurd.

For some reason anytime the subject of brisket is brought up, a lot of people say it isn't any good and the chorus of replies is always along the lines of:

"You don't like brisket because you haven't had the perfect brisket yet. I, like you, have had just heaps and heaps of terrible brisket. But, there's a gas station down in Mississippi(or wherever) with good brisket and it is just the best BBQ ever. The people in all the other cities and (especially) states don't know how to make it, but people near where I live cook it perfectly. I don't blame you for hating brisket if you don't get it from the place I get it from."

If it is such a marginal food that you need some rare alchemist to make it taste good, then maybe pig is better.

I have never had good brisket in Texas. Not Dallas. Not Fort Worth. Not San Antonio. Not Houston. Not Corpus. Nor any little place between them. I have had good brisket at two different places in Kansas City.

Nobody has to be an alchemist to make good brisket. You just have to know what you're doing and you have to care.

It's extremely forgiving. Just always get it from a butcher and let it ride at 225 and you're fine.

There are better ways to do it and a lot of opinions on what woods are best (I do half peach and half oak) but you don't have to worry about this to have great brisket.

$75 and you've got ten days of meat.

You guys should move to Texas. The people there are starved for good slow cooked brisket. Y’all could make a killing. Until demand picked up and you had to start cranking out twice the briskets in half the time.

Burnt ends>beef brisket.

I suppose I just temper my expectations for what/where I'm at. For example I never order a steak from waffle house, I'm there for the patty melt and hashbrowns. That is my philosophy.

This is true. BBQ comes from a pig. It's either ribs or pulled pork shoulder. But... it comes from Porky. Not Bessie the Cow.

That being said... it still tastes really, really good.

If you go to Tyler's in Amarillo, I guarantee you will have good brisket. Im not sure what places you are going to, so I dont deny you are getting bad brisket...maybe youve just had bad luck
