I honestly can't think of a single food item Rkansas is known for.

While the subject is Jambalaya, I cook Dirty Rice more than anything, even my File Gumbo and will put it against anyones.

Catfish

Dirty Rice really isn’t Cajun. In fact I never had it or even saw it until I went to LSU. It’s mainly Gonzales to New Orleans. River parishes.

Cajuns eat Rice Dressing. Easy to make with Richards or Savoies dressing mix. Mainly chicken gizzards and maybe liver and pork. It’s tough to get the exact make up so dressing mix is the way to go.
