While there wasn’t and official NC game prior to 1998, there were bowl games that were defacto NC games:
1973 Notre Dame over Alabama. The Tide already won the UPI going in, but the game would decide the AP champion.
1982 Penn State over Georgia
1985 Oklahoma over Penn State by virtue of Tennessee upsetting Miami.
1986 Penn State over Miami
1987 Miami over Oklahoma
1988 Notre Dame over West Virginia
1992 Alabama over Miami
1993 Florida State over Nebraska
1995 Nebraska over Florida
1996 Florida over Florida State

The top 3 teams were upset in their bowl games. LSU beat #2 Arkansas; #5 UCLA beat #1 Michigan State. So #4 Alabama beat #3 Nebraska to win the AP national Championship.
The Coaches poll had picked Mich. St. as the Nat. Champ before the bowls, but because the AP had picked Bama last year before the bowls which they lost & Arkansas won their bowl being unbeaten, everyone complained and forced the AP to wait until after the bowls before picking a champion, which would be Alabama.
Also 1978.
Alabama #2 beat #1 Penn State (the famous Goal Line Stand game) in the Sugar Bowl to win the AP 1978 national Championship.
Some thought that USC should have won because they beat Bama earlier in the year. But USC also lost to an unranked team after beating Bama and dropped in the rankings.
USC in the meantime beat #5 Michigan in the Rose Bowl on a very controversial play - Charles White's "Phantom Touchdown"

If you want to count "championships" awarded 40 years retroactively in "seasons" where there were like 4 teams playing 2-3 games each, sure.
Seriously, I'm not even exaggerating. There were like 3-4 teams playing 2-3 games each for the first decade of college football just about.
Nobody even thought a "national championship" was even a thing until the 1920's.
Winning a single legit title in today's era is worth more than 10 of those "titles"

The years they won the national championships there were barely any teams playing football (the first year they were only one of 2 teams) and they only played a handful of games.

Did you know that Alabama is the only school with multiple titles, that every one of their national title teams, won before 1970, finished their season in a bowl game?

The Orange Bowl following the 65 season was for the AP title. #3 Nebraska vs #4 Alabama (after #1 Michigan State and #2 Arkansas lost earlier).
The Rose Bowl following the 68 season was for the AP title. #1 Ohio State vs #2 USC.
The Orange Bowl following the 71 season was for the AP title. #1 Nebraska vs #2 Alabama.
The Sugar Bowl following the 78 season was for the AP title. #1 Penn State vs #2 Alabama.
