There may be people in Texas that know how to cook brisket. But I know for a fact there are a lot that don’t.
That included checking out every place recommended to me for brisket within a 100 miles of Ft. Hood over my 3 years (1 deployed) when I was stationed at The Great Place.

How many of the cities listed serve BBQ pork steaks? I honestly do not know but St. Louis style BBQ pork steak is my favorite. Pork steaks are not even available in stores in some areas.

Saws is absolutely my favorite spot, I've yet to have a bad meal there.
Dreamland is good, but I think Archibald's is far better,
Chucks in Auburn is fantastic. And not BBQ related, but Arce, The Hound, and Hamilton's are unbelievable places to eat down there.

Lockhart, Tx
I love pork barbecue and have eaten at dozens of places across the south, but Texas bbq, as much as I hate to give TX credit, is vastly superior. Nothing beats brisket or beef rib.

Easily Kansas City or St. Louis.

Lockhart still does one thing really well: sausage.
Those little personal links are great. Rough grind, more beef than pork, heavy pepper, with a nice snap. No cheese, beans, or other weird stuff mixed in.

Saw’s ribs are my go-to meal there. My Dreamland experience is dated, and as I have heard from friends it has really gone downhill.
If you like Acre and the Hound in Auburn, you should try the Depot too.

Captdalton makes a good point. While I have had really good brisket (Butcher Paper BBQ in Opelika has been the most reliably good brisket BBQ that I have had), there have been several times I went to a supposedly great brisket BBQ place and it was like chewing on a piece of burnt leather.

Yeah, I like those. But, my favorite came from City Market in Luling, TX.

Will try Depot next time I'm in the area for sure

Stay out of the big cities in Texas if you want good brisket. Don't go outside of the state of Texas to find it either. I've never found it anywhere else in all my travels ...
Good pork is easy to find in numerous states.

Now that Texas is in the SEC, metro Austin in a landslide.

Worst bbq I've ever had has been in Alabama and Louisiana. Both states don't have a clue. South Carolina is the correct answer to the op question.

This place is on my top 5 establishments in the world. With the giant Radio Flyer Red Wagon out front. Not much to look at, or even visit, but the BBQ is flat out delicious.
After going through every answer, and plotting them on google maps, and then having AI show me where the mean point is..... Arkadelphia, AR.
Allen BBQ there is a solid choice. They know how to do pork, and they know how to do brisket. Smoky rich sauce. just about 200 yds west off I30 at the Hwy 8 exit. Enjoy, its the geographic center of the SEC BBQ world

name the places in Houston and Austin where you've had brisket that was not good

questionable advice considering that following it will result in a person missing a good portion of the top 10 places in the state.

A good Beef Rib (I'm talking about the dino-sized ones) are one of the most dangerous food items. They're so good, but so rich that you can eat yourself sick with one.

They all have good bbq, but I like the nostalgia of those old historic Lockhart smokehouses. The BBQ is still excellent. My issue with the bigger cities is their price point.
