In Texas off the top of my head,

Winters Blizzards
Hamlin Pied Pipers
Troy Trojans
Mesquite Skeeters
Crane Golden Cranes
New Braunfels Unicorns
Cameron Yoemen
Frost Polar Bears

The students picked the nickname in the 70's. They don't want it changed either. Doesn't seem to bother anyone

I always mention this in these type of threads, but in the north part of Las Vegas there's a rivalry between the Legacy Longhorns and the Arbor View Aggies.

Threat of legal action from Alabama nixed Crimson Tide and elephants. They can't be the Bears because Tuscaloosa's 1979 federal desegregation order banned the city from ever again using the mascots or colors of the old Druid City High Dragons or the Tuscaloosa High Black Bears.
