My father in law was a coonass, hall of fame football coach in Louisiana, who was a great person. Every time I think of him, I can’t help but think of his damn mouthwatering, melt in your mouth brisket. It was plate licking good. As a matter of fact, I need that damn recipe now, no clue why so haven’t already done so.

I want some damn brisket now but only decent place in mobile is Moes and they only have on Wednesday

Aaron Franklin is from Bryan. The guy who owns Snows is also a big Aggie and they have A&M stuff all over their place. A&M has a BBQ class that is the hardest class to get into and the same guy holds a class for non students that is designed for the most serious BBQ chefs in the State that's like winning the lottery to be able to attend.

That said, there are plenty of sips that can cook brisket. You put 50k Texans going to school and some folks will know how to cook. I will say though that they also are much more likely to screw it up by trying some unholy combination with brisket "fusion" of some kind.

Whole hog is an art form and great but in the end perfectly cooked beef will always be superior to perfectly cooked pork. It's science.

I lived 25 years of my adult life in Texas. Smoked and grilled meat, beef is fantastic....BUT pork is bbq, period.

Oh...and I prefer salt lick to that stuff people feel an insane need to stand in line for 3 hours for near the homeless encampment in austin.

Not only do they not care about defending BBQ, they dont even REMEMBER what it tastes like.

Texans can smoke some meat (pun intended), but their sides and any sauce offerings, generally, straight up trash. It really isn’t barbecue in the traditional sense.

My favorite barbecue is honestly Kansas City. Those ribs, burnt ends, sauce…

I’ve found great barbecue in quite a few spots in the country. I can’t decide what or where was the best, but I CAN unequivocally say that Carolina BBQ is the worst of the worst.

One of Tejas’s primary offerings other than brisket is a a sausage link…a fricking sausage link. That shite isn’t barbecue. Tejas often confuses barbecue and “grilling.”Burgers and brats aren’t barbecue. Neither are those fricking tortillas and pinto beans you put on the plate as well. Get that shite out of here, ese.

I live here and I agree. They get the meat smoked right and then want you to pour douche water on it essentially. Inferior to the style I grew up on....
