This is actually the correct answer. Smoked hog, cows chicken....all delicious. I'm sure smoked fish is good too I'm just not a seafood person.

That may seem counterintuitive, but brisket perfection is incredible but is damn hard to accomplish.

If you can love it, eat it and enjoy it without sauce, it’s reached perfection.

Funny thing. My Guard unit went to El Paso for summer camp. All those NG guys from Alabama couldn't get enough BBQ Beef Ribs.

Even if it was a Buccee’s, it would still be immensely better than the trash meat drowned in sugar ketchup that is pulled pork.

Funny you say that because brisket became popular amongst the Jewish people because it was the most inexpensive piece of meat on the cow. Inherently, brisket is tougher than shoe leather. That's why you have to cook it for eleventy billion hours to make it edible.

On the other hand, pork is full of delicious fat to make it tender and juicy every time.

But do you have to drown it in sugar ketchup to hide it’s atrocious flavor?

Brisket by itself is amazing.

Pulled pork by itself is basically dog food.

Went there a while back and got the beef rib, way better than any pork rib I’ve ever had.

Whole hog is an art form and great but in the end perfectly cooked beef will always be superior to perfectly cooked pork. It's science
Ive traveled all over Texas and North Carolina eating at many of the famous and not so famous places and brisket just holds more flavor than pulled pork. I do like the eastern carolina vinegar sauce and South Carolina mustard sauce more than Texas sauces though. But with brisket you really don't need sauce.
