Since we are 7th overall, why would they have put us in Gonzaga’s region and not Baylor? Is it not a true S curve?

I don't think they typically try to pair up potential "1-8", etc type games. I've seen where the stated #1 overall seem to also have the top #2 in its region. Not sure what their criteria is, other than balancing out the conference reps. _(i.e. if the SEC has 8 teams in the tournament, they try to put 2 in each region.)

I know they normally don’t but I could’ve swore I read that since everything is being done without geographic advantages/matchups that it’d be based on the curve.

yea they announced at some point there would be a true S-curve for the tourney due to geographic locations not mattering.

They 100% said this, so maybe it was just an oversight on their part?
There are a few instances where they may/will deviate from the true S curve, but that would not apply to the scenario above with us being in the same region as Gonzaga.
Here are the scenarios that are supposedly the only reason that the committee will deviate from the S curve:

Teams from the same conference shall not meet before the regional final if they played each other three or more times during the regular season, to include the conference tournament.
Teams from the same conference shall not meet before the regional semifinals if they played each other twice during the regular season, to include the conference tournament.
Teams from the same conference may play each other as early as the second round if they played no more than once during the regular season, to include the conference tournament.
If possible, rematches of nonconference regular-season games should be avoided in the First Four and first round.
