There was a kid from Shreveport who was the #1 QB for his class from 6th-8th grade by all the big time sites. Once he hit high school he just never hit a bug growth spurt and dropped significantly in the rankings but still ended up as a 3*. He signed with Central Arkansas and has been in the workforce ever since graduating college.
