That’s the way the originally cook them (in the ring). If you don’t say scattered, that’s how the cook em. Seems like it should naturally come scattered, right? Maybe we should come up with a name for having them in the ring.

See that's what I thought but at all the WaHos I go to they're just scattered anyway whether or not it's specified. So I stopped saying it.

Same here. I still say it out of habit but it's definitely superfluous, as I've not seen them served any other way in at least 20 years at a WH.

If you just order regular hashbrowns, they'll be cooked in the ring and come out in a circle. To this day. At least at non commie Waffle Houses

When you're getting scattered hashbrowns without ordering scattered are you ordering your hashbrowns covered, chunked, or some other way?? Because those are scattered by default to facilitate the chunking or dicing or smothering or whatever.

The ring in those circumstances wouldn't work. Maybe for covered. But you want the other stuff mixed areound in there not sitting on top

Lately I haven't been adding any extras at all. I guess TN has communist waffle houses.

Sounds like it.

All I know is sometime back when KungFlu first hit, I was in a situation where we ordered Waffle House to-go. And when I opened mine they'd screwed up my order and the hashbrowns had been cooked in the ring and were in that boring circle without the extras and i was bummed.

Side note: Waffle House to-go sucks. Their achilles heel is that if their food isn't eaten within 5 to 8 minutes tops from coming off the griddle, it loses it's magic rapidly

The oil they use is called "flavor fry".

The secret to the hashbrowns is they are parboiled prior to packaging. They are simply crisping prior-cook potato strands.

Storebought hash browns are slivers of raw potato.

Take your storebought, boil them for 5 minutes, strain, freeze. Then take handfuls of that to attempt WH hb's.

Parboil = partially boiled

I feel like if you boiled store bought hashbrown shreds for five minutes they would be cooked all the way through.

Waffle HOuse Snapshots:


-eating lunch at WH maybe 3pm
-first time i'd sat still all day since 5am
-maybe 3 customers besides me and it's pouring down rain
-diagonally

-sedan splashes into lot
-and from booth window I watch this 90-something year old man struggle to get out
-and try to awkwardly retreive his walker from backseat

-then there's a severe commotion inside WH
-and the two 60 something year old waitresses on duty bolt out the front door
-and one holds an umbrella not over herself but over the man
-and they each have arms on him tenderly helping him make the hike across parking lot
-and it takes them what seems like 5 mins
-and the two older ladies are soaked to the bone

-he's got on one of those VFW hats
-and the soaking wet waitresses are pouring him coffee
-and smiling like crazy
-and talking about him out loud to him and to each other
-and bringing him his usual

-and not once the whole time he was in there

-did he ever say a single word

Flavor Fry and "Lo melt" likely the same thing. Butter flavored hydrogenated oil.

As to the actual hash browns, Idaho potato.com send to think that they use dehydrated potatoes? No clue as to the accuracy there, never asked.

If you don't feel like buying the same thing, 1:1 butter to canola oil ratio is probably close enough.

If using fresh potatoes, after grating I'd recommend rising the potatoes in cold water to get rid of excess starch, then drain well and place on a few kitchen towels or many paper towels. Fold the towels around them and place something heavier on them for a bit to help dry and draw out moisture (can lightly salt them to help with this also if you want).

I tried everything you could imagine with grated potatoes, partially baked potatoes, drained, refrigerated....etc. I do think there’s something to the dehydrated and refrigerating process that you have in order to get the right consistency. The special oil is something I need to try.

Crispy hash browns can be achieved a lot of ways. WH uses freeze dried hashbrowns then rehydrates them. Whirl is another product you can get at gfs like flavor fry.

I use frozen, leave out over night, open bag, pour on to paper towels and squeeze out all the water. Fry, turns out great.
