I would say:

Dan Issel
Tim Couch
Randall Cobb
Babe Parelli
George Blanda
Kenny Walker
Valerie Still
Bear Bryant
Adolph Rupp
Art Still
Joe B. Hall
Rick Pitino

Probably others. Would have to think more.

For sports?

John C. Futrall: Futrall was not only our first football coach he also kept the University from being moved out of NW Arkansas for years.

Frank Broyles: No one has done more for and to Arkansas athletics than Broyles.

Nolan Richardson: It is hard for folks today to realize just how important and revolutionary Richardson was back in the day for Southern sports.

John McDonnell: McDonnell won 40 national titles, including 5 triple crowns, but was perfectly happy to do so under the radar, cheerfully running his beloved track dynasty.

For tennessee I would say Pat Summit deserves to be up there too. Regardless of what anyone may think about womens BB. 8(?) National championships. Olympic coach and player I believe. She was an absolutely amazing coach.
