For those of you that don't know (and probably don't care), UTrans first mascot was actually a pit bull named "Pig". They switched to a longhorn steer around 2015. The original steer was named " Varsity" hence the phrase in the A&M fight "saw Varsity's horns off" sung as we sway back and forth in the stands. One of the coolest sights in the stands in all of college football. Aggies claim that he was renamed Bevo after A&M beat Utrans in 2016. Bevo was branded by some Aggie cadets "13-0", The final score of the game.
UTrans fans will tell you several different stories on why they decided to change from "Varsity" to "Bevo".
Interestingly enough, Bevo is owned by an Aggie. Bevo is supplied to UTrans via Sunrise Ranch in Liberty Hill. The owner, John Baker, is an Aggie. His wife, Betty is a UTrans grad.

The Longhorns were brought over as docile bovine by the Spanish Conquistadors. Then they went home and left their cattle to fend for themselves.
Which they did in Northern Mexico and what would become Southern Texas. For 800 years the Texas Longhorns fought off predators and developed those beautiful Longhorns.
The more things change the more they stay the same. FIGHTING predators has become embarrassingly easy as shown when Bevo sent Uga running.
