Yea Gumbo is not a simple subject. There are thousands of versions of it. Putting in Tomatoes is definitely a Creole ( Mostly New Orleans ) version of it, but there can be exceptions ( it adds a sweet taste I dont like ). New Orleans before French owned was Spanish who used far more Tomatoes than French and it stuck. Hell, most of the French Quarter including Bourbon Street Buildings is actually of Spanish influence and not French.
There are basically three different types of Roux's to make Gumbo which adds to the complexity. The Main ingredients add another complexity. And for the final stage is to make it with or without Okrey ( which is how its pronounced in Mississippi ) or File or a combination of the two for the thickeners. Me personally as much as I love Okrey, I dont use it in Gumbo. I use File. I've had ppl from several states including LA say that it was the best. If you use Okrey fry it a little bit to get rid of some of the sliminess.

I'm a gumbo purist. No tomatoes, no okra, no potato salad. Roux, stock, trinity, file, meat, rice is all you need. But I'm not gonna lie... I unwittingly ate a gumbo once that had tomatoes in it, and I went back for seconds.

Why would he cook gumbo. He is no more than a mile or two from a dozen places that make great gumbo. Hell, just get it delivered and not have to worry about making a roux. But as was said before, what does so.eone from Georgia know about gumbo. And as far as the ages, get your own cuisine and stop trying to steal from us cajuns.

Cajuns do. Before moving to Baton Rouge recently, I spent most my life in Bourg and Chauvin. People in Terrebonne, Lafourche, St. Mary and all along the coast (New Orleans is not the coast) eat gumbo with potato salad , usually instead of rice. I don't always do so, but it is great for a change. If you haven't tried it, don't knock it.

If your gumbo is spicy the potato salad neutralizes it. It’s dope
