Well, except for the 4 years I spent in the military, I've never lived more than 20 miles from the Gulf of Mexico. Is that southern enough for yo arse?

Man I equate creole & cajun with Southern because although I don't currently live in LA, I once did and still have family there. Instead of grills in the backyard, they have big arse pots. Gumbo, boils, etc. Guess I subconsciously lump it in with 'southern' food.

Desserts have to be made on-site because due to high flammability transport would require placarding.

Good white gravy is a dying art but done right it's hard to beat. The modern "healthy" version is an abomination.

I spent a year Baton Rouge and went to culinary school before I decided on a career change. However, I am very familiar with their cuisine, and I have to say it if I have a favorite style, Cajun is it. My first week there, a friend took me to a place to get fresh crawfish. We got a picture of beer and they brought a beer tray heaping with crawfish, and I told my buddy there is no way I could eat all of it. But I did and most of the second one they brought me too. And I learned why the tables had rolls of paper towels on them too.

Raised in east Texas. Went to Robert E. Lee HS. We had the Lee Gentlemen, Southern Bells, Confederate flag - the whole thing, until liberals came in a fricked it all up. People now days have lost pride in their heritage and it's a shame.

The van zants are buried in my town... I'm currently doing some repairs at one of my dad's rentals. I'm probably only a 1/4 mile from Brickyard Road currently.
