Was in Baytowne last time I was down there. Don't remember a good portion of that night. Had dinner at Graffiti and far too many drinks at various places.

I could eat seafood every day for the rest of my life. I can't think of any seafood I don't like.

I like correctly cooked medium, which is medium rare at most restaurants. Outback actually is the only chain that typically does medium right.

ETA but if I had to choose between medium rare and a medium that wasn't correct, I'd take a more medium rare any day.

All of this is pretty much exactly my thoughts. I've had to switch to ordering medium rare because if I order medium at a restaurant, I get closer to Well... ugh.

Best oysters I've had were covered in kind of a creamy étouffée crawfish sauce and baked. Mmmmmm

Holy shite that sounds incredible.

Went down there for Spring Break. Rum Runners and the Landshark patio bar down by Poppy's almost destroyed me.

Samesies. Everything from sushi and shellfish, to tempura catfish and fried bream. It's all delicious.

Yeah, they were off the chain. That's the best way I can describe the sauce. A crawfish étouffée with some heavy cream added. So fricking good.

I don't like eel. At least the times I've tried it in sushi.

If I am going to eat Oysters on the halfshell that aren't raw I prefer Bienville to Rockefeller.

I've heard it's standard practice among chefs to use lower quality cuts for people who order medium/medium well/ well done steaks.

Medium rare is the only way a steak should be cooked.

All this talks about oysters and seafood reminded me of one of my favorite commercials of all-time.

Such a relaxing commercial.

I like Rockefeller too. Or just covered with some bread crumbs, butter, and Parmesan cheese and baked is pretty awesome too.

How much would it suck to work for UF as a UGA and FSU grad? Actually considering applying for a position... seems insane and yet it's the perfect next step.

I'd work for Alabama if the salary was right.

I took one of my seven yachts to the Mediterranean this past summer to sail around the various Greek islands. Was quite the time.
