Cam Newton, Jamal Lewis, and Clowney in the SEC.
Overall, though, its LeVar Arrington. I went out of my way to catch Penn State games when he was there. I still think he's the best colleges ILB ever.

Bo Jackson - fewer people watched college baseball but he was fun to watch
In the 80's Alabama, Auburn, and Florida State had a round robin series's in Dothan where we lived at that time. Bo was fabulous and cranked one ofthe longest home runs I ever saw there. My 8 year old son got the ball. I told him stand waaaaay behind everybody and that's where he got it. We found Bo after the game and he gladly signed the ball. My son wanted to keep it rather than let me put it up. He lost it in a week!

He didn't play in the SEC but Deion Sanders was fun to watch. Also not in the SEC but who didn't love watching Barry Sanders trapped 5 yards behind the line of scrimmage then break ankles and take it to the house ?
