Sure. When teams are not in contention you see this happen more often. For instance Bama in 2019 had several players opt out of the Citrus Bowl. LSU is not the only school that has players opt out.

We had two players with history of injuries opt out. Jeudy, Ruggs, Wills, McKinney, etc all played.
