How Many SEC Teams would have gone undefeated with Florida State's Schedule?

A couple... but look at the way they've just destroyed teams... they're top 5 nationally in points scored and points allowed. If they were squeeking by teams like Notre Dame was last year, you might have a point.

Those plus I think Ole Miss would have been close with like 1 or 2 losses maybe even 12-0

Possibly numerous. None would have been as consistently dominant, though. Florida State hasn't won a game by less than 28 points since September. To act like they simply went undefeated through a soft schedule is inaccurate. They totally dominated everyone.

Vandy likely goes 10-2 with losses to Clemson and Miami. Could conceivably drop a third one to Maryland.

Maybe 3 (Auburn, Alabama, and MU) depending on when Auburn played Clemson (in October they probably lose against Clemson).
USC beat Clemson but dropped a game to Tennessee early in the year so expecting them to run the table against bad teams is obviously not a given. UGA lost to Clemson early in the year, lost to Vandy, and played poorly against Fla and Tenn so they are out. LSU lost to UGA early and Ole Miss most of the way through the season so they are probably a no.

3 posdibly 4 and if we had any semblance of a defense 5. And I think there would be just as large a margin of victory as FSU had in most cases

Alabama would have called off the dogs or played a simple game versus the cupcakes. Nick Saban doesn't want to embarrass his opponents. The Tide doesn't run up the score.
