For UF I’d say Louis Oliver. LINK
It’s always nice to have an unknown step up and shine.
Edit for clarity.

I have heard that we have a walk on QB that is probably mid-major starter quality but for the life of me I can't remember his name. Perhaps another UGA fan can help me here.
Edit: at first I thought that you meant at this moment. As for all time, I am drawing a blank but I know that there has been some memorable ones.

Rashad Johnson, DB - played 9 years in the NFL.

I want to say Matt Mauck was technically a walk-on and the Cubs paid his tuition.

Rodrigo Blankenship, if you mean in the now.
Will Muschamp was a walk-on.
FB Christian Payne was, too.
So was DB Aaron Davis.
RB Verron Haynes, hero of the Hobnail Boot game.
DB Tra Battle...
Nate Taylor was a walk-on LB in 1979 that became a key starter for the 1980 championship team.

Ahhhh, the Subway-work-your-way-through-school-guy! He would light you up and was an excellent story. So much so, literally every time he made a tackle the commentators would note that he was a walk on that worked at Subway.

Richard Tardits for best Georgia walk on. Tardits held the UGA sack record before Pollack came along.

I’ll throw Kerwin Bell in as an honorable mention.

In recent memory, Rashad Johnson comes to mind. Walked on as a running back, switched to safety, and left as an All-American.

Baker Mayfield was the best walk on for both Texas Tech and OU. Tech letting him leave was just stupid.

That movie on Burlsworth was a good watch.
